Almighty x The Library

A gin-fizz, but all fizz no gin.

The team at The Library in Wellington has created a divine booze-free play on a gin-fizz that uses our Almighty Peach and Ginger sparkling water that you can make at home.

Ingredients:

50mls Seedlip Spice

20mls lemon juice

15mls eggwhite

20mls spiced honey syrup (recipe underneath)

All above in a shaker, shake twice with and without ice.

Add 60mls Almighty Peach and Ginger sparkling water directly in the shaker (it mixes better), then strain over ice in a tall glass.Garnish with dehydrated fruit and a cinnamon quill.

Making a spiced honey syrup at home...

Put some of your favourite spices in a pot and toast them for a couple minutes, until they start smelling real good. Our pick is a couple cinnamon sticks, a few cloves, a pinch of nutmeg, a star anise and some cardamom. Add 1 part hot water and 2 parts of your favourite honey, let simmer for ten minutes, then bottle and store in the fridge for up to two months. You can leave the spices in for a more intense flavour.
